Apple Cider Snickerdoodles: The Coziest Cookie for Fall

Looking for a dessert that brings all the cozy vibes of autumn without the pumpkin pie? These Apple Cider Snickerdoodles are soft, chewy, and infused with warm apple cider and cinnamon — perfect for Thanksgiving or any fall gathering!🍎🍁


Ingredients:

1 cup apple cider (reduced to 2 tbsp)

½ cup butter, softened

½ cup granulated sugar

¼ cup light brown sugar, packed

1 egg

½ teaspoon salt

1½ cups all-purpose flour

1 teaspoon cream of tartar

½ teaspoon baking soda


Cinnamon-Sugar Coating:

3 tablespoons granulated sugar

¾ teaspoon ground cinnamon

¼ teaspoon ground nutmeg (optional)


1. Reduce the Apple Cider:

In a small saucepan over medium heat, simmer the apple cider until it reduces to 2 tablespoons. This will concentrate the flavor. Let it cool completely before using.


2. Make the Dough:

In a mixing bowl, cream together the butter, sugar, and brown sugar until light and fluffy.


Beat in the egg and cooled apple cider reduction until combined.


In a separate bowl, whisk together the flour, cream of tartar, salt, and baking soda. Gradually add the dry ingredients to the wet ingredients

until just combined.


3. Chill the Dough:

Cover the dough and chill for at least 30 minutes to make it easier to handle.


4. Prepare the Coating:

In a small bowl, mix the sugar and cinnamon together.


5. Shape and Coat:

Preheat your oven to 350°F and line a baking sheet with parchment paper. Roll the dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat.


6. Bake:

Place the coated dough on the baking sheet, spacing them about 2 inches apart.

Bake for 8-10 minutes, or until the edges are set but the centers still look soft.


7. Cool and Serve:

Let the cookies cool on the baking sheet before transferring. Serve warm for extra cozy vibes!
