Bacon Egg + Chive Breakfast Buns

These beloved treats are a staple in our household, and it's easy to see why. Imagine a soft, ricotta-infused dough enveloping a tantalizing filling of scrambled eggs, smoky local bacon, fiery Calabrian chilis, and fragrant garden chives. What really takes them to a whole new level of deliciousness is the addition of everything bagel seasoning, adding that irresistible combination of flavors reminiscent of your favorite bagel shop! These buns are perfect for those busy mornings when you need a portable and satisfying breakfast. Whether you're rushing out the door or enjoying a lazy weekend brunch, these buns will satisfy your cravings and fuel you for the day ahead!


Ricotta Bread Dough

  • 1/2 cup whole milk ricotta cheese

  • 3/4 cup lukewarm milk (preferably around 100 degrees)

  • 3 1/2 cups bread flour

  • 1 tsp sea salt

  • 1 tsp honey

  • 1/4 cup sugar

  • 7 g dry active yeast

  • 2 tbsp everything bagel seasoning, to garnish

  • 1 tbsp cream, to help make the bagel seasoning stick

  1. In a measuring cup, stir yeast and honey into lukewarm milk until dissolved

  2. Let bloom for 5 minutes

  3. In a separate mixing bowl, stir to combine sugar, bread flour, and salt

  4. Add yeast mixture into the dry ingredients

  5. Work yeast/water mixture into dough briefly before adding in ricotta cheese

  6. Once combined thoroughly, cover and proof for 45 minutes-1 hour

  7. Cook your filling and allow to cool before the next step

  8. Portion dough into 2 oz dough balls and roll out to 1/4 inch in thickness

  9. Stuff with 1-1 1/2 tablespoons of Bacon Egg + Chive Filling and seal thoroughly at the bottom

  10. Place on a baking sheet and proof for 30 minutes

  11. Preheat oven to 350 degrees

  12. Brush rolls with cream and coat thoroughly with everything bagel seasoning

  13. Bake for 20-25 minutes or until desired level of doneness


Bacon Egg + Chive Filling:

  • 10 whole eggs

  • 1/4 cup whole milk

  • 1/4 cup whole milk ricotta cheese

  • 8 oz bacon, cut into small pieces

  • 2 cloves garlic, minced

  • 1/2 cup chopped onion

  • 1/4 cup freshly grated parmesan cheese

  • 1/2 tsp Calabrian chili paste

  • 2 tsp fresh chives

  • 1 tsp sea salt

  • 1/2 tsp freshly cracked black pepper

  1. Crack eggs into a mixing bowl and whip thoroughly with milk + ricotta cheese

  2. Preheat a cast iron skillet or frying pan to medium heat and render bacon pieces

  3. Once bacon is nearly fully rendered, add in chopped onions + garlic

  4. Cook until onions are translucent

  5. Reduce heat to low and slowly stir in eggs, the key for a nice creamy scrambled egg is consistent stirring!

  6. Once eggs have nearly completely formed into curds, stir in parmesan cheese, Calabrian chili paste, chives, sea salt, and pepper

  7. Remove from heat and allow to cook before filling into Ricotta Bread Dough
