Classic Spring Herb Beef Roast

The essentials to a timeless and classic recipe, simple braised beef with seasonal spring vegetables, garden herbs, and of course, good wine.

What I love the most about this dish is that it is so versatile, is perfect for meal prepping ahead, and is an amazing way to showcase seasonal herbs and vegetables. Locally grown grass-fed beef is the best way to not only support the rachers in your community but to taste meat the way it truly is supposed to taste- rich, fulfilling, and nourishing.

Homemade rosemary infused sea salt is a quick way to pack a burst of herbaceous flavor, but keep in mind that you can get creative here too! Create your own favorite blend of spices, herbs, and edible flowers for the ultimate spring roast. Lavender and herbs de provence are two of my favorite spring time aromatics to incorporate into my recipes!

Red Wine Braised Beef Roast With Local Vegetables & Herbs🌿

  • 2 lbs beef round roast

  • 2 cups homemade beef stock

  • 2 cups of good red wine

  • 1 cup roughly chopped onion

  • 1 cup roughly chopped carrots

  • 1 cup roughly chopped celery

  • 1 cup cherry tomatoes

  • 8 cloves garlic, whole or sliced in half

  • 5-6 sprigs fresh rosemary

  • 10 sprigs fresh thyme (or more depending on how small they are!)

  • 4 tbsp organic salted butter

  • 1 tbsp olive oil, for searing meat

To season:

  • 1 tsp chopped rosemary

  • 4 tsp sea salt

  • Freshly cracked black pepper


Directions:


1. In a bowl, combine sea salt and rosemary. Rub until salt becomes fragrant, preferably leave for 10 minutes to infuse lightly. Coat meat thoroughly with salt and fresh pepper


2. Heat a solid bottomed pot over medium high heat, add olive oil and brown meat on all sides


3. Deglaze with wine and using a wooden spoon be sure to lift up any brown bits that gathered at the bottom of the pan. Reduce by half


4. Add beef stock, vegetables, herbs, and pats of butter. Cover and braise at 225 for 8 hours or overnight


5. Serve with your favorite side or recommended variation! 🍴
