Leftover Makeover: Cheesy Tater Tot Omelette

If you’re like me you’re thankful for all of the amazing and delicious ways to eat potatoes!

My younger brother works at a local restaurant and is always bringing home leftovers from his breaks. He, like so many of us, prefers a side of either fries or tater tots with his meals- and these two are obviously classics, but does anyone else have a hard time figuring out how to reheat them in a way that doesn’t make them soggy, gross, or dried out? I love that this recipe is so versatile and works with any potatoes/cheese that you have in the house!

Cooking should never be a place where you feel restricted, but rather the most creative. Look at what you have and what you can use to make this recipe work for you- you don’t need to grocery shop for each and every recipe you want to make! This is basically a hash brown omelette, because I wanted to make it almost an equal amount of potato and egg. It’s a great source of protein (if you use high quality eggs/yogurt it should be around 17 g) and a great way to start your day off with sustenance while also being sustainable for your pantry! 🥰

Cheesy Tater Tot Omelette

  • Extra virgin olive oil (or whatever oil you prefer to use), for frying

  • 2 eggs

  • 2 tablespoons heavy cream or milk

  • 1/2 cup shredded tater tots/bite-size chopped fries

  • 1/3 cup grated or sliced white cheddar cheese

  • 1/2 tsp homemade taco seasoning

Tomato Yogurt Sauce:

  • 2 tbsp fresh salsa

  • 1 tbsp plain Greek yogurt

  • 1/4 tsp - 1/2 tsp hot sauce

  • 1/2 tsp taco seasoning


Simple Taco Seasoning:

  • 1/4 tsp ground cumin

  • 1/4 tsp chili powder

  • 1/4 tsp smoked paprika

  • 1/4 tsp garlic powder

  • 1/4 tsp oregano

  • 1/4 tsp cayenne


🍴To cook:

1. Whisk eggs and cream together until

2. Heat oil in a sauté pan and add tots or fries and season with taco seasoning, cook over medium heat until they begin to crisp

3. Add eggs over the top, season with salt and pepper, and lower the heat.

4. Stir eggs and potatoes into an even layer, top with cheese, and cook with the lid on for 3-4 minutes until eggs are fully cooked through and cheese is melted

5. Fold the omelette in thirds so that the cheese stays in the middle and flip onto a plate

6. Mix together ingredients for the sauce in a small separate bowl and garnish on top of the omelette
