Classic Tiramisù

For as long as I can remember this recipe has been the center of every holiday and family gathering. To me birthday cake was nothing compared to my Nana's homemade tiramisu, and she made sure to teach it to me when I was still small enough to touch my head to the counter. The smell of fresh espresso cooking away in her Alessi pots is still something I'm proud to be able to do today after getting her hand-me-downs. This recipe holds such a special place in my heart and will be sure to impress everyone at your dinner party because of its naturally elegant flavors. The combination of Marsala wine, mascarpone cheese, and fresh brewed espresso is a match made in heaven, and something you're bound to only find done right in Italy. Get these six essential ingredients and start playing the Andrea Bocelli!

Tiramisù

  • 6 egg yolks

  • 1 cup superfine cane sugar

  • 1 tbsp quality vanilla extract

  • 1/3 cup Marsala wine or 1 1/2 tablespoons Italian cognac

  • 2 8 oz containers of mascarpone cheese

  • 1 package ladyfinger cookies

  • 2 cups freshly brewed espresso

  • Cocoa powder/shaved chocolate for garnish

  1. Whip egg yolks and sugar together until pale and fluffy

  2. Scrap down sides and continue to whip off a few more minutes until glossy and thick

  3. Add in mascarpone and continue to whip together until smooth

  4. Stir in vanilla and Marsala/cognac

  5. Get a baking dish and line with a layer of ladyfinger cookies dipped in espresso

  6. Layer with half of the mascarpone cream

  7. Layer the other half of the ladyfinger cookies alternate to the previous direction

  8. Top with remaining half of mascarpone mixture

  9. Top with cocoa powder and cocoa shavings

  10. Cover with plastic wrap and let set for a minimum of 4 hours
