Roasted Bone Marrow with Tallow Fried Crostini

Roasted bone marrow is a delicacy I’m glad that I was introduced to years ago back in New York. Ever since, I've been in love and must order it if it's on a menu when I’m out. Roasted bone marrow captures all of the flavors that we all know and love when eating a properly rendered piece of meat, nothing is more pleasing to the palate than the delicate balance of fatty, unctuous meat along with the light crispness of herby crostini. With a combination like that, you don't need anything more.


One of the keys to this recipe, aside from simplicity, is quality bones and quality bread. I have a great relationship with my local butcher who delivers the best possible bones for this recipe while I bake my own bread or snag a loaf from the farmers market!

Roasted Bone Marrow

  • 2 lbs fresh, organic beef boned

  • 5 sprigs fresh thyme

  • Sea salt & freshly cracked black pepper

  1. Preheat oven to 550 degrees

  2. Season bones liberally with sea salt and cracked pepper, roasted for 15-20 minutes, rotating as needed

  3. During the last 2-3 minutes of roasting, top bone marrow with fresh thyme

  4. Once done roasting place bone marrow onto plate, reserving melted tallow for herb crostini to follow

Tallow Roasted Crostini

  • 10-12 1/4 inch sliced baguette

  • 5 sprigs thyme

  • 2 cloves garlic, finely minced

  • Melted beef tallow from bones

  • Sea salt & freshly cracked black pepper

  1. Once bone marrow is fully roasted, reserve onto place

  2. Place fresh thyme sprigs and minced garlic paste into hot melted tallow to infuse

  3. Place sliced bread on top and toss to coat

  4. Season liberally with sea salt and cracked pepper

  5. Bake at 400 degrees for 10-12 minutes until golden brown

  6. Serve topped with roasted bone marrow and thyme
